PANISSIMO Dicembre-December is OPEN and lussekatter

For this edition, Panissimo comes back here on Bread and Companatico, so it is here that you will be able to submit your breads, of every type and shape, made in December. Actually… although every bread you make is VERY welcome, we have an (optional) monthly THEME for December, which is: Christmas and Festive Breads. So… please send us tons of breads, sweet or savory, to celebrate together the coming festivities. And if you have already baked a Christmas inspired or festive bread in November, and even if you already published about it in November, send it here. We will have a super dooper Christmas collection at the end of the month and you are all warmly invited. So what are you waiting for? At the end of this post you will find an easy grid where you can insert the link to your bread. Eccomi!!! Dopo mesi di ospitate varie su alcuni fantastici blog amici (grazie Simona e Michela siete state eccezionali in tutti i modi possibili) ecco che Panissimo Raccolta ritorna qui ed io ritorno a Panissimo. Che lo so che sono stata un po’ latitante dalla blogsfera ma ho una scusa valida: Panissimo Gruppo su FB, che io e la Sandra ci stiamo curando come un fiorellino. Venite anche voi se non vi annoia parlare di pane, tecniche e farsi due risate in compagnia… E se proprio ci volete bene, magari date un “mi piace” anche a Panissimo Pagina (che ci dimentichiamo sempre di aggiornare, ma come si fa a star dietro a tutto?). Comunque… manca poco a Natale e per prepararci questo mese, in aggiunta a poter mandare qualunque vostro pane, abbiamo un tema speciale: Pani Natalizi e delle Feste. Quindi mandate, mandate, mandate… e anche se avete gia’ sfornato e pubblicato nel mese di novembre, mandate lo stesso: per i Pani Natalizi e delle Feste accettiamo anche cose fatte in novembre. Alla fine di questo post troverete una semplice griglia dove inserire il link al vostro pane. E se non avete un blog, mandatemi (myitaliansmorgasbord@gmail.com) una foto e la ricetta e ce pens moi. To give the good example, here I post my recipe for lussekatter, super fluffy sweet buns that are made in Sweden around this time of the year, to celebrate Santa Lucia, the saint who brings light in these, usually pretty dark month (but not this year… the sun is shining more than ever before in December).
Per dare il buon esempio, qui vi inserisco subito la ricettina dei miei lussekatter, morbidissime briochine svedesi che si fanno proprio in questo periodo per celebrare Santa Lucia, la santa portatrice di luce in questo mese buio (ma non quest’anno, il sole qui splende come mai prima in dicembre).
LUSSEKATTER (MY WAY)
280 g + 80 g bread flour (organic stone-ground)
140 g white spelt flour (organic)
250 g whole-fat milk (organic)
20 g fresh brewer’s yeast (or 4 g instant yeast)
70 g caster sugar (organic raw)
1 egg (organic free-range)
95 g unsalted butter (a little softened but not loose)
1/2 teaspoon sea salt
1/2 g saffran
1 1/2 teaspoon ground cardamom

dried fruit (typically raisins, I used dried strawberries, cherries, and blueberries)
Warm up the milk (finger warm) and dissolve the yeast in it. Combine the two flours and add most of this mix to the yeast, add also all other ingredients, including the butter in small pieces. By hand: combine well first with a wooden spoon and then by hand, energetically. Let rest for an 1/2 hour. Tranfer the dough on a clean surface and add the remaining flour. Start slapping the dough on the surface and then fold, slapp and then fold, until the dough appears smooth and well developed. See this extemporary video taken by my husband who was impressed by how “bad” I was treating lussekatter dough 🙂 By machine: knead at low speed for about 15 minutes. Let rest for 1 further hour then shape. Take one tiny piece of dough at the time and roll it into a thin cilinder. Roll each end of the cilinder on itself, in sense opposite to the other end, in the typical lussekatter shape. Let rest for another hour, brush with egg and place two small pieces of dried fruit at both ends. Bake at 225 degrees (Celsius) for 10-15 minutes.
LUSSEKATTER (A MODO MIO)
280 g + 80 g farina di forza
140 g farro bianco
250 g latte intero
20 g lievito di birra fresco compresso (o 4 g lievito secco)
70 g zucchero
1 uovo
95 g burro
1/2 sale marino
1/2 g zafferano
1 1/2 cucchiani cardamomo in polvere
uovo
frutta secca(tipicamente uvetta, io ho usato fragole, ciliege e mirtilli secchi)
Intiepidire il latte e sciogliervi il lievito. Combinare le due farine e aggiungere la maggior parte di esse al lievito sciolto nel latte. Aggiungere tutti gli altri ingredienti, incluso il burro a pezzetti. A mano: combina bene prima con un cucchiaio di legno e poi a impastando energicamente. Lasciar riposare per un 1/2 ora. Trasferire l’impasto su una superficie e aggiungere la farina rimanente. Sbattere l’impasto sulla superficie e poi ripiegare, sbattere e poi piegare, fino a quando l’impasto appare liscio e ben sviluppato. Puoi vedere come ho fatto in questo video estemporaneo fatto da mio marito che era rimasto colpito da come maltrattavo l’impasto dei lussekatter 🙂 A macchina: impastate a bassa velocita’ finche’ l’impasto non appare liscio, una 15ina di minuti. Lasciar riposare per 1 ora, quindi formare. Prendere un pezzetto di impasto e farne un cilindro sottile. Arrotolare su se stesse le estremita’ del cilindro in senso opposto l’una all’altra. Lasciar riposare per un’altra ora, spennellare con uovo e mettere un pezzettino di frutta secca su entrambe le estremità. Cuocere in forno a 225 gradi (Celsius) per 10-15 minuti.
