I am pleased to announce that my dear friend Ralph Nieboer has suceeded in bringing Spanish Master Baker Josep Pascual back to Northern Europe, in Oosterblokker, Holland, to be precise. A two day workshop in a spacious kitchen with a lovely professional oven will take place 9 and 10 January 2016.

The workshop will enable you to learn the world-celebrated Pascual method. Josep is a former champion of the World Cup of Baking and has also be honored to be in the jury for the same prestigious contest. So, believe me, he can teach you a trick or two and help you to make your loaves look stunning.
Day:1 you will be learning basic and high hydration white sourdoughs and decorative techniques
Day:2 you will be learning whole wheat sourdoughs
-shaping and decorating whole wheat loafs
-how to use your different flours (t80, t55, t65, spelt)
The master class includes 2 lunches, plus coffee and tea.
The master class will be held at Windmill de Krijgsman in Oosterblokker, and will last a total of 8*2 hours of baking fun.
Skill level: you need to have some basic bread baking skills, but no advanced knowledge is needed.
