It is not without emotion that I am going to write the first post on this new blog, in short, that I embark on this new adventure.
Not really new, I have known Barbara now for a couple of years, together we created the collection of the Italian Panissimo given our particular passion for bread and wild yeast in general.
Still, it is a thrill to write here: a train leaving for some kind of new station, who knows what new adventures …. carpe diem.
In this moment of my life, in full revolution, as I always found a place of peace in the dough, in wild yeast. I know it’s strange, very strange, but I relax only when I knead.
We will still have to know each other better along the way, but now I’ll tell you about my pane sciocco, my saltless bread.
Pane sciocco, without salt, is typical of my region, the county of Florence.
It started because of a distant historical rivalry between the medieval city of Florence and Pisa. Even today there is a saying in Florence citing “better to have a dead body home than having a Pisan at the door” and I am not going to tell you how the Pisans answer to this …
It all started around year 1100, when the city of Pisa, a powerful maritime republic, blocked the flow of salt from its harbour to the city of Florence.
The Florentines, naughty by nature, rather than giving in to the blackmail, came up with pane sciocco, stopping using salt.
To then realize that actually bread without salt matches better what is tasty and spicy took very little, so little than salt was not reintroduced in the daily bread.

Today in bakeries we can find breads of all kinds, of any background, but in Florence, I assure you, the bread is SCIOCCO!

Non è senza emozione che mi accingo a scrivere il primo post su questo nuovo blog, insomma, che mi imbarco per questa nuova avventura.
Non proprio nuova, conosco Barbara ormai da un paio di anni, insieme abbiamo creato la raccolta italiana di Panissimo dato la nostra particolare passione per i pani e per i lieviti in generale.
E’ comunque una grande emozione scrivere qua sopra: un treno in partenza per chissà quali nuove stazioni, chissà quali nuove avventure, …. carpe diem.
In questo momento della mia vita, in completa rivoluzione, ho come sempre trovato un angolo di pace negli impasti, nei lieviti. Lo so, è strano, stranissimo ma io mi rilasso impastando!
Avremo comunque modo di conoscerci meglio strada facendo, adesso vi racconto del mio pane sciocco.
Il pane “sciocco”, senza sale, è tipico delle mie parti, della provincia di Firenze.
Partiamo da lontano, dalla rivalità storica fra le medioevali città di Firenze e di Pisa. Ancora oggi c’è un detto a Firenze che cita: “meglio un morto in casa che un pisano all’uscio (per uscio a firenze si intende la porta di casa)” e non vi dico come rispondono i pisani ….questo per farvi capire la rivalità esistente fra le due città fin da sempre.
Tutto inizia intorno all’anno 1100, quando la città di Pisa, fortissima Repubblica marinara, blocca l’afflusso di sale dai suoi porti verso la città di Firenze.
I fiorentini, dispettosi per natura, anzichè cedere al ricatto si inventano il pane sciocco, smettono di usare il sale.
Da lì ad accorgersi che in realtà il pane senza sale si abbinava meglio alla cucina saporita e speziata dell’epoca il passo è stato breve, tant’è che non è poi più stato reintrodotto nelle quotidiane panificazioni.

Oggi nelle panetterie si trovano pani di tutti i tipi, di tutte le provenienze, ma a Firenze, vi assicuro, il pane è SCIOCCO!

 

Questa ricetta apre le danze della raccolta mensile Panissimo. Quindi, avanti, fatevi sotto ed inserite anche voi i vostri pani freschi di forno alla fine di questo post.

La ricetta

      1. 150 g. stiff levain fed twice
      2. 700 g. flour (200 g. finely ground durum wheat, 500 g. stone-ground wheat, 200 g. whole wheat khorasan flour)
      3. 450 g. water
      4. make a dwell with the combined flours
      5. loosen the stiff levain with the water and then add it to the flours
      6. knead well until all feels smooth, adding water if necessary
      7. continue with a little stretch and fold
      8. place the dough in a bowl and then in the cool oven with the light on
      9. it will take from 6 to 8 hours for it to double
      10. take the dough and make your log (filone) first making some fold to make it stronger
      11. transfer it in a banetton of your choice and let it rise properly
      12. transfer it over an oven dish and make two cuts on top
      13. bake 10′ at 250°C, 35/40 minutes at 180°C and another 5 minutes with the oven slightly open
      14. during the baking place a little bowl with some water in the oven
      15. let the bread cool off on a grid while it sings it song

La ricetta

          1. 150 g. di pasta madre rinfrescata due volte
          2. 700 g. di farina (200 g. semola rimacinata di grano duro, 400 g. di farina tipo 1 macinanta a pietra, 200 g. farina di kamut integrale, 100 g. farina tipo 0 macinata a pietra)
          3. 450 g. di acqua
          4. formare la fontana con le farine miscelate fra loro
          5. sciogliere il lievito madre nell’acqua e poi aggiungere alla farina
          6. impastare fino ad ottenere un impasto corposo e plastico, aggiungete acqua se necessario
          7. procedete con un po’ di stretch and fold , 200 colpi????
          8. mettete l’impasto in una ciotola e lasciatelo lievitare nel forno spento ma con la luce accesa
          9. ci vorranno dalle 6 alle 8 ore per il raddoppio
          10. prendete l’impasto e formate il vostro filone facendo prima delle pieghe di rinforzo
          11. mettetelo a rilievitare nella forma infarinata che avete scelto e aspettate ancora fino a che non lievita bene
          12. capovolgete il pane su una leccarda da forno e fate un paio di tagli per lasciar lievitare in cottura
          13. cuocete in forno statico: 10′ a 250°C, 35/40 minuti a 180°C e altri 5 minuti con il forno leggermente fessurato
          14. all’interno del forno durante la cottura ponete una ciotola di metallo piena di acqua per far si che si formi vapore che renderà la vostra costra più croccante
          15. lasciate raffreddare il pane su una griglia e statelo a sentire mentre canta la sua canzone appena sfornato
