Most people feel enlightened and ready for a fresh start after Christmas and by New Year they are ready to write down elaborate lists of resolutions. I personally do not get any good rest during the Christmas’ break due to all the pressure of celebrating, getting together and making everyone happy (feeling like myself comes always last in the list). Summer is to me a much better candidate for a real break and I generally feel like I can have a fresh start thereafter.
Packing for our beach-and-hotel vacation in Croatia, I was so concerned about what to bring -not to forget were my sourdough and a minimal survival kit to feed it, plus, a complete pharmacy for my 4-year old princess who often gets sick- so I did not have any time or inspiration to look for a good book to bring with me. Destiny wants that when I stopped at the airport’s bookstore, in the 5 minutes I had to make a choice, I picked up an interesting sounding book titled Eating Animals. Lately, an increasing number of good readings about sustainable and ethical eating has become available, and this particular book stands out from the crowd for the intensity of the emotionally charged contents delivered by the author (a brilliant Jonathan Safran Foer) and for the stringent logic used to support a clear line of thought.
I have long been wondering whether it is right to eat meat and I may have finally come to an agreement with my deep self. Last year I tried to become vegetarian but I was eating too much wheat and legumes, which I am slightly sensitive to (I cannot eat too much of them), so I stopped (being a vegetarian). Now I know that it’s all about measure, as always. So, my “New Year’s” resolution is to follow my heart and not to eat meat or fish. But, risking here to sound too weird, I could easily eat insects one day. Insects may be the future of omnivore eating: they are plenty and would not pollute much if farmed. Plus… they are indeed quite distant from us and should be more easy to consider as food -how come we instead feel better eating what’s cute?
This said, here comes a totally yummy 100% veggie burger recipe for everyone -no insect included. The first time I made it I used eggs. This time I saved some of the cooking -or preserving if canned- liquid of the beans instead. The result was utterly delicious and could shine on the table of any true foodie, no matter what her/his food preferences are (complete recipe below).
