Decadent Mint-Chocolate Sourdough Brownies

These were meant to be a treat for the weekly Friday coffee-break at my office. It is in fact a Swedish custom (and a very nice one) to have coffee and cake with colleagues on a Friday afternoon (fredags fika). We (me and the brownies) had instead to stay home to take care of a sick little princess. She’s already doing better so that I can take the time to write about my little brown beauties.

A few days ago I tasted an industrial chocolate-covered mint brownie and I really liked its super-chocolaty, minty, flavor. So I thought I could make my own and started googling for recipes. No success. Most had a sugary layer of mint cream which did not appeal to me. Other did not have frosting at all. So I remember of the lovely brownies recently posted by Susan on Wild Yeast. They were sourdough-based which I think is a fantastic innovation. Coincidentally, my sourdough starter was just about ready to be used… so I took Susan’s recipe, added tons of mint chocolate and frosted like I once did with a “death by chocolate” cake. The result is a minty delicacy that tastes somewhat between brownies and fudge. To die live for!

MY ADDITIONS: substitute the 72% bittersweet chocolate from Susan’s recipe with 200 gr (7 oz) of bittersweet mint chocolate and 100 gr (3.5 oz) 85% bittersweet chocolate.

Frosting: heat 1 dl (little less than 1/2 cup) heavy cream. Remove from heat and add 60 gr (2 oz) bittersweet mint chocolate (chopped) and 100 gr (3.5 oz) of 70% bittersweet chocolate (chopped). Stir well and let cool for a few minutes, until it thickens. Spread on the baked and already cooled brownie rectangle. Refrigerate for a few hours, possibly overnight. Cut into little squares (one square will be enough for most).

CONSIDERATIONS: Yes, brownies with sourdough really work and can turn in an extremely decadent and mouth-watering treat. These particular ones are so rich that one little square with a cup of dark coffee is really all you need. But who can resist to the superfluous?
